Green Beans Almondine

This is a very versatile green vegetable, smooth and gentle in flavors and goes with most anything. It always is a favorite at our dinner table.

  • 1 pound fresh green beans
  • 0.33 cup sliced almonds
  • 1 small garlic clove (minced)
  • 1 tablespoon sundried tomatoes (chopped) - preferably not in oil
  • 1 tablespoon butter
  • 1 pinch salt and pepper

Green Beans Almondine Directions

  • Wash and cut off the ends of the beanseat
  • Heat salted water in a pot large enough to cover the beans
  • Put beans in boiling water and cook for 8 minutes. Check by taking one out and taste it. If beans are thin, check after 6 minutes
  • Drain beans in a colander and then put rapidly in ice water to stop cooking. Do not let sit in ice water, just stop the cooking and then place the beans on a dish towel to dry, wrap them to keep warm
  • Melt butter in a skillet, sauté rapidly garlic, sundried tomatoes and almonds. Make sure almonds do not get brown
  • Then add beans and turn them in mixture
  • Taste and decide if any salt and/or pepper is needed
  • Serve immediately
