  • 1 package baby sweet peppers (prepare as outlined below)
  • 0.25 cup fresh mint (chopped)
  • 1 garlic clove (minced)
  • 1 teaspoon white Balsamic vinegar
  • 0.5 teaspoon lemon juice
  • 0.5 tablespoon olive oil
  • 1 pinch salt and pepper
  • 0.13 teaspoon Agave

Sweet Baby Bell Peppers Directions

  • Wash peppers, cut end off, half them lengthwise and remove seeds and white membrane
  • Finely chop fresh mint
  • Mince garlic, saute in a little olive oil, don't let it brown
  • Add peppers
  • Sprinkle with salt and pepper, stir
  • Saute lightly
  • Add white Balsamic vinegar, stir
  • Add chopped mint and lemon juice, stir
  • If peppers are not sweet enough, add a little agave
  • Let simmer for a few minutes
  • Do not overcook, peppers should be warm, juicy but not limp
  • Adjust flavor

Serving Suggestion

Goes well with meats, tofu and fish. Make sure colors do not clash
