Zucchini with Tomatoes

Easy to prepare and so tasty. Served with meat or tofu, or just by itself with rice, it is a delightful dish. Be creative and pair it with any other of your favorite proteins or starches.


For 2 people ()


  • 2 medium zucchini (washed and sliced medium thin)
  • 3 tablespoons shallots (chopped fine)
  • 1 garlic clove (chopped fine)
  • 1 tablespoon olive oil
  • 1 can (14.5oz) diced tomatoes or 1 cup POMI strained tomatoes
  • 1 teaspoon thyme (dried)
  • 1 teaspoon oregano (dried)
  • 1 teaspoon basil (dried)
  • 5 drops Tabasco - or to taste
  • 0.5 teaspoon Pickapepper sauce (optional)
  • 0.13 teaspoon Harissa
  • 1 pinch salt and pepper to taste
  • 2 tablespoons sour cream
  • 1 tablespoon freshly grated Parmesan cheese

Zucchini with Tomatoes Directions

  • In a medium large skillet, heat oil and add shallots. Saute for a few minuts but do not let shallots get brown
  • Add garlic and saute for another minute. Do not let the mixture get brown
  • Add the zucchini, tomatoes , and all the seasonings. Blend well
  • Cover and cook on medium heat stirring occasionally until vegetable is cooked (should still be crunchy).
  • Check seasoning and adjust if necessary
  • Add sour cream and mix thoroughly
  • Serve topped with freshly grated Parmesan cheese

Serving Suggestion:

Easy to pair, just watch out for color combination and that the zucchini dish, rich and intense in flavors, does not overpower the protein.
