          Scallops with Vermouth are a wonderful flavor combination. They key to tasty scallops is not to overcook them; they easily get rubbery. This is a wonderful first course - elegant, tasty and easy to prepare.

          A great way to cook salmon – it remains moist and brings out the flavors. I enjoyed this preparation when living in Paris. Served at room temperature it is also a perfect dish for a buffet. I have used wild and farm raised salmon for this preparation, and prefer farm raised for this dish. I do not eat a lot of farm raised fish, and if I do, I make certain it is responsibly farmed.

          Wild Salmon - Oven Baked

          Wild salmon has a stronger flavor. It is very important not to overcook it. I like to oven bake salmon at lower temperatures and get great results. Make sure it is cooked and keep it moist and tasty!
