Never boil your eggs. Place in a pan under 1" of cold water and bring to a boil. As soon as the water nears the boil, cut the heat and cover. Let stand for 4 – 6 minutes for soft boiled eggs and 11-13 minutes for hard boiled eggs. Time accurately.
Boiling eggs makes them dry, tough, and frequently overcooked. Unpeeled, you can safely keep your hard boiled eggs in the refrigerator for up to 5 days.
